Chicken sukka with coconut


Ingredients:
1/2 kg chicken
1/2 coconut scraped
2  medium sized onion
4-5 pepper corns
2 pieces dalchini
2 tblsp coriander seeds
5-6 kashmiri red chillies
8 garlic
2 inch ginger
2 bay leaves
1/4 tblsp turmeric
1/4 tblsp mustard seeds
10-12 curry leaves
1 tblsp jeera
1 small ball of tamarind
5 cloves
salt to taste

Direction:

Masala:

1) Fry coriander seeds,  jeera, red chillies, mustard seeds in 1 tblsp oil. Fry till you get the aroma of coriander seeds
2) Fry 3 garlic cloves, 1 sliced onion, 10 curry leaves in 1 tblsp oil for 3-4 mins.
3) Fry dalchini, pepper corns, bayleaves(tej patta), cloves in 1 tblsp oil for a minute.
4) Fry coconut with little bit of turmeric powder.
5) Mix all the ingredients except coconut mixture in the mixer and make paste with 3 tblsp water and tamarind. After that add the coconut in the mixer and make the paste. Just coarsely grind the coconut.
Masala is ready.

6)Heat 3 tblsp oil in a vessels. Add musatrd seeds, 5 curry leaves, 1 sliced onions. Fry for 3-4 mins. Crush the ginger and garlic and add to the oil( ginger garlic added in good quantity gives a nice flavor in the curry). Fry for 3-4 mins and add the cleaned chicken.
7) Cook the chicken in slow flame.
8) After the chicken is cooked, mix in the coconut masala. Add salt.

Serve it with neer dosa.

Fried chicken

A yummy and simple chicken recipe with simple ingredients


Ingredients:


11/2 cup bonless chicken cut into medium or small size
2 tblsp ginger-garlic paste
1/2 lemon juice or 2 tblsp curd
1 tblsp green chilly paste
1/2 tblsp haldi powder
1/2 tblsp garam masala powder or Everest chicken masala powde
3 tblsp besan/ chickpea flour
Oil for frying
salt to taste

Directions:

1) Mix all the ingredients with chicken 
2) Keep it aside for 1 hr(More time you keep the chicken marinated the taste will be better) 
3) Heat oil in a deep bottom pan and fry the chicken. Thats it
4) Delicious fried chicken is ready

Prawn Biryani

Some thing i tried on my own :P


Ingredients:


1 1/2 cup basmati rice
1 cup prawns
3 large  finely chopped tomatoes
1 large fnely chopped onion
1/2 tblsp jeera
11/2 tblsp pulav or garam masala powder
1/2 tblsp mirchi powder
1/2 tblsp haldi powder
5-7 peppercorns
1 inch dalchini
5-6 cloves
1 big elaichi
2 tblsp ginger garlic paste
3 tblsp oil
2 tblsp chopped corainder leaves
salt to taste

Directions:

1) Clean and Boil the rice with little salt. Strain the rice
2) In a big vessel, first heat oil. Add pepper, dalchini, badi elaichi and cloves. Add onions and fry for 2-3 mins. Add ginger garlic paste and fry again for 3-4 mins.
3)Mix in the prawns.Cook the pawns for 5 mins. Now add the chopped tomatoes, mirchi and haldi powder. Cook for 10 mins till the tomatoes are mashed nicely. 
4)After the tomatoes are cooked add the pulav/ garam masala powder. Add salt to taste. Let this cook for another 5 mins.
5) After the masala is ready Mix in the rice and add 2 tblsp chopped corainder on top.

Manglorean chicken gravy/Kori gassi


Ingredients:
1/2 kg chicken
1/2 coconut scraped
2-3 medium sized onion
4-5 pepper corns
2 pieces dalchini
3 tblsp coriander seeds
5-6 red chillies
15 garlic
2 inch ginger
1/2 tblsp turmeric
1/2 tblsp mustard seeds
10-12 curry leaves
1 tblsp jeera
5 cloves
salt to taste

Direction:

Heat 3 tblsp oil in a vessels. Add musatrd seeds, 10 curry leaves, 2 sliced onions. Fry for 3-4 mins. Crush the ginger and garlic and add to the oil( ginger garlic added in good quantity gives a nice flavor in the curry). Fry for 3-4 mins and add the cleaned chicken.

Masala:

Fry 3tblsp coriander seeds, 1 tblsp jeera,4-5 red chillies, 1/2 tblsp mustard seeds, 3 garlic, 2 onions, 10 curry leaves in 2 tblsp oil for 3-4 mins. Keep it aside --- (1)

Fry the dalchini, 10 pepper corns, 2 bayleaves(tej patta), 5 cloves in 1 tblsp oil.----(2)

Mix both the above fried ingredients ( 1 & 2) with coconut in mixer with 1/2 cup water and make a paste(Even if water is more not a problem as its a curry)

Masala is ready.

Once the masala is ready, mix it with the cooked chicken add 1 cup water and bring it to a boil. Mangalorean chicken gravy is ready

Serve it with neer dosa or rooti( mangalorean dosa). Rooti you can get it in any mangalorean shop. This curry goes well with rice chakli also.

Fish Fry

Pics I have not posted, since some of my Vegeterian friends dont like it :(
Asuvidha ke liye khed hai
Ingredients

1 Fish(Halwa(black promfret) or King fish)
1 1/2 tblsp red chilly powder
1/2 tblsp haldi powder
Juice of 1/2 lemon
1 tblsp ginger garlic paste
2 tblsp chickpea flour(besan)
1 cup rawa
Salt to taste
Oil for frying

Directions:

Clean the fish and cut it into pieces.

Mix all the ingredients with 2 tblsp water(except rawa). Add the fish. Keep it aside for 1 hour.

Heat oil in a pan.  Coat the fish in the rawa and deep fry it.

Remove it in a paper.

Prawns in green gravy

Prawns cooked in green gravy. This goes well with simple pulav(recipe is given earlier)



Ingredients:
1 cup prawns
1 cup corainder leaves
1 inch ginger
10 garlic
10 curry leaves
1/2 tblsp mustard seeds
5 medium sized tomatoes
2 green chillies
1 tblsp garam masala
1 medium sized onion
1/2 tlsp turmeric powder
2 tblsp oil
Salt to taste

Directions:
Make a paste of tomatoes, corainder, ginger, garlic, green chilliy

Heat oil. Add mustard seeds. Once the mustard seeds starts spluttering add curry leaves, onion and the prawns. After 5 mins add the green masala, garam masala and salt. Thats it. Prawn in green gravy is ready.

Chicken Biryani

Non-vegs..Here you Go!!. First recipe for this New Year. 


Ingredients:


5 big tblsp of ghee
3 cups basmati  rice
6  medium sized onions sliced
6 meidum sized tomatoes  chopped
1 big piece ginger
25 garlic cloves
2 green chillies
2 cup corainder leaves
1/2 cup pudina leaves (make paste) (not compulsory)
1 smal tblsp red chilli powder
1/2 tblsp turmeric powder
chicken 3/4 kg
2 stick dalchini
10 small elaichi
5 cloves
10 peppercorn
1 big elaichi
2 bay leaves



Instructions:

Make paste of coriander leaves,pudina,green chillies,ginger and garlic.


Heat ghee in pan, add onions, fry for 15 mins till its turns transparent. Add tomatoes cook well for 15 mins. Add the garam masala(cloves,elaichi,pepper,dalchini,bay leaves). Fry for 2 mins. Add the green paste, haldi, chilli powder. Cook for 5 mins. Add the washed chicken. Cook the chicken well.


cook the rice seperately with salt and 2 bay leaves.


In a vessel first add a layer of rice and some ghee followed by a layer of gravy. Follow the process for the entire rice and gravy.


Biryani is ready : )
