Paneer Butter Masala

This one is again by Miss Sreevidya Nair...

Paneer cooked in spicy rich tomato gravy-

a recipe without the usual matar/palak with paneer :)



You need:

Cottage cheese (paneer),
400 gramsButter
2 teaspoonsOil
1 teaspoonBay leaves
2 Cloves
2 Cinnamon
2 one-inch sticksDried red chillies, broken 2
Coriander seeds, crushed 2 tablespoons (optional)
Onion , sliced 1-2 medium
Ginger-garlic paste 2 teaspoons
Coriander powder 1 teaspoon
Red chilli powder 1 teaspoon
Tomatoes, chopped 6-7 medium
Salt to taste
Kasoori methi , crushed 1/2 teaspoon
Fresh cream 2 tablespoons (cheese can also be used)


How to :
Heat butter with one teaspoon oil in a kadhai. Add bay leaves, cloves, cinnamon, red chillies (and half of the crushed coriander seeds-if using). Sauté for half a minute. Add onion and stir-fry for thirty seconds and add ginger paste and garlic paste. Cook till the mixture is cooked. Add coriander powder, red chilli powder and tomatoes. Cook on high heat till oil leaves the masala. Add paneer pieces and salt. Add half a cup of water. Cook covered on low heat for five minutes. Sprinkle kasoori methi and mix in lightly. mix in cream/cheese.Remove from heat. Serve hot. Yummy paneer butter masala is ready.

Misal Pav


I have cheated a bit in this recipe :P. Got his ready masala from shop. Added some of  other ingredients in that and it suprisingly came out good :) ....




Ingredients:

1 Packet of  ready Misal masala mix(this contains some grounded masala, matki)
1 cup yellow vatana
2 tblsp ginger garlic paste
1 tblsp garam masala
3 medium sized tomatoes
pinch of haldi
1 medium sized onion chopped
1 tblsp mustard seeds
3 tblsp oil
Salt to taste
Farsan

Direction:

Mix the misal mixture in one cup water and keep it aside.

Boil the yellow vatana with little haldi and salt in pressure cooker.

Heat oil in a pan, add mustard seeds and ginger garlic paste. Add the chopped tomatoes. Cook the tomatoes well for 5 mins. Now add the misal mixture. Cook for 5 mins and add the yellow vatana, garam masala powder, salt and 3 cups water. Bring it to boil. Rassa is ready.

In a plate, add the farsan, pour the yummy rassa over it, then mix in the chopped onion and lemon juice. Serve this with pav

Vermicelli Kheer


I have eaten this kheer in many places, but i suppose my Mom makes the best one. Really simple and very tasty....




Ingredients:

1 litre milk(more the milk taste is better)
7-8 cardamoms
1 packet vermicelli
1/2 cup dry fruits Kaju, badam(any thing u like)
sugar(according to your taste)
3 tblsp ghee

Direction:

Ground the cardamom seeds with  1 tbsp sugar.

Fry the vermicelli in ghee till its light brown.

Boil the milk, add the vermicelli, sugar and dryfruits. Cook for 7-10 mins, till the vermicelli is cooked. Thtats it. Serve it hot or chilled. Oooo its really tasty...hmmmmmmm

Sukha Bhel


Ingredients:
2 cup puffed rice(kurmura)
1 medium sized tomato chopped
1 small onion chopped
1 green chilly chopped
3 tblsp cup coriander leaves
1/2 cup sev
1/2 cup chana and peanuts
1/2 lemon squeezed
salt to taste

Direction:

Mix all the ingredients in a bowl.
