Alu Vadi/Patra

Maharashtrian dish which serves as a nice snack.

Ingredients:


6-7  Colacasia leaves
2 cup besan
1 tblsp dhania powder
1 tblsp jeera powder
1/2 cup tamarind pulp
3 tblsp jaggery
1/2 tblsp haldi powder
2 tblsp red chilly powder 
1 tblsp oil 
1 cup Water
Salt to taste

Directions:

1) Remove the stems of the leaves properly.
2) Mix besan and all the other ingredients with water to make a thick batter. Apply the batter on the leaves and roll it tightly.


4)Boil water in idli steamer and steam the rolls
5) Insert a knife and it should come out clean, that means your roll is steamed.  Cut into pieces


6) Heat oil in a pan, shallow fry the pieces(It can also be deep fried). I like it deep fried :)

Fried chicken

A yummy and simple chicken recipe with simple ingredients


Ingredients:


11/2 cup bonless chicken cut into medium or small size
2 tblsp ginger-garlic paste
1/2 lemon juice or 2 tblsp curd
1 tblsp green chilly paste
1/2 tblsp haldi powder
1/2 tblsp garam masala powder or Everest chicken masala powde
3 tblsp besan/ chickpea flour
Oil for frying
salt to taste

Directions:

1) Mix all the ingredients with chicken 
2) Keep it aside for 1 hr(More time you keep the chicken marinated the taste will be better) 
3) Heat oil in a deep bottom pan and fry the chicken. Thats it
4) Delicious fried chicken is ready

Chakli Recipe

Chakli made as falhar during diwali

Ingredients:

1 kg rice
2  Coconut scrapped
1 cup urad dal
1 cup chana
1/2 cup ghee 
3 tblsp white sesame seeds
red chilly powder according to taste
1 tblsp haldi/turmeric powder
Oil for deep frying
salt to taste

Directions:

1)Soak the rice in water for two hours. Strain it and dry it in sun for whole day.
2)Roast the urad dal and chana for 2-3 mins. Add it to the rice. Make flour of these three ingredients.

Chakli Dough:
1)Prepare the coconut milk. Mix the coconut with water in mixer. Strain the coconut mixture in a thin cloth to get the coconut milk,
2) Into the flour add the coconut milk, ghee, sesame seeds, haldi and red chilly powder to make a thick dough.
3) Put this dough into the chakli mould and press it out in circular motion to make chaklis of desired size(generally of 3 rotations)
4) Heat enough oil in a pan. When oil is heated, put chaklis into the oil. Fry till its golden brown.
6) Once cool store it in a air tight container.

Tur Dal Pulao

A wonderful combination of dal and rice.

Ingredients:
3 tbsp oil

1 medium size onion


1/2 tblsp mirchi powder
1 inch ginger
7-8 garlic
3 green chillies
1 small tblsp shahi jeera
1/2 tblsp turmeric powder
1 tblsp pulav masala(you can get this in any regular store) or garam masala powder
Tomato puree(5 medium sized)
2 big cups Basmati rice
1/2 cup tur dal 
3 cups water
1/2 cup chopped coriander leaves
salt to taste

Directions:


Wash and soak the tur dal in water for 10 mins.
Heat oil in a heavy bottom pan. Add jeera. Fry for 2 mins. Add the chopped onions. Saute for 2-3 mins. Make paste  of ginger,garlic and green chilly. Add it to the oil. Fry for 3-4 mins. Add tomato puree, turmeric powder, mirchi powder and pulav masala.Let it cook for 5 mins. Add the soaked tur dal and 1 1/2 cup water. Cook for 10 mins or almost the dal is cooked. After the dal is cooked mix in the rice and add salt. Add remaining 1 1/2 cup of water and chopped coriander. Cook for 5 mins in high flame then slow down the flame till the rice cooks.
Serve it with raita.

My school friend used to bring this pulao. Dont know the actual recipe. Just tried it out in my own way.

Rice kheer(Paysam)


Yummy rice kheer with thickened milk....




Ingredients:

11/2 litre milk(more the milk taste is better)
1 small cup rice
sugar to taste
3-4 cardamom

Direction:

Soak the rice in water for 10 mins.

Boil the milk in slow flame. Once the milk has become hot, add the rice. Cook in slow flame for 1 1/2 to 2 hrs till the milk is thickened(almost half of the original quantity). Keep stirring in between. Add sugar according to taste and cardamom powder.
